Reverse Sear

In this video I go over the "Reverse Sear" method of cooking a Beef Tenderloin on a Medium Big Green Egg. I used Dizzy Pig Season (pick your favorite) let it sit as the Egg comes up to temp and let the reverse sear do the magic.  Remember to let the meat rest for at least 10 minutes before slicing. Ash Clean Out

A beginners "How-TO" cleaning guide to getting the Egg ready for your next cook. The Ash Tool was used to clean out the bottom of an XL Egg. Make sure you clean the side vent holes before firing it back up.

Turkey With Mad Max Seasoning

Cooked a fresh turkey following a 10-12 hour brine. Followed the brine up with Dizzy Pig Mad Max (great flavor). Cooked in-direct on a XL Big Green Egg for about 5 1/2 hours, until internal temp was 165. Flavor was great

Turkey Brine

Nice 10-12 hour Brine for turkey. Make sure you rinse after removing the turkey from the brine. Season with favorite rub (I like Dizzy Pig Mad Max) and cook your way...

EGGtoberfest 2018

Amazing weekend at Stone Mountain, Georgia at the 2018 EGGtoberfest. The food was amazing. The people so nice and welcoming. This was our first visit to the EGGtoberfest, but not our last. I heard over 205 Eggs got fired up for everyone to enjoy.

3Lb Lobsters

Papa J Grills Lobster cooked on the XL Big Green Egg. Two 3lb lobsters marinated and grilled at 400 degrees. Hope you enjoy the cook as much as we enjoyed the lobsters.

Apple Crisp

My mother's Apple Crisp Dessert Recipe, cook Indirect on the XL Big Green Egg (you could cook in the over at 350 for 60 minutes). A nice mix of apples is the secret to the success of this recipe; I used Granny Smith, Macintosh and Honey crisp apples. Hope you enjoy


Papa J and Flat "The Steak" Stanley cook Filets on the XL Big Green Egg. Seasoned with Dizzy Pig "Raising the Steaks" Rub. Cooked to an internal temp of 135 and let rest for 10 minutes. Hope you enjoy


Dairy Free Oreo CocoWhip Delight. Recipe:Oreo Thins, Dairy Free Coconut Whipped Topping. Mixed to create a cool summer favorite. Simple and fast for when you don't know that to have and you can't beat Dairy Free. Oreo Thins used to keep this dessert light!
